Ordering Beef In 3 Easy Steps

Confirm with us what you want and what we have available. Our beef is sold in 1/4’s or 1/2’s
Step 2
Click the beef order form link above. This will take you to the processors website. There are 3 options for ordering your beef.
1.You can fill out the form online.
2.Call in your cutting instructions to processor. If you call farm name is Will Burtt / Burtt’s Beef
3.Print off form and email form to us.
Step 3
You will be contacted when your beef is ready for pick up at the processor. This is typically 2 weeks after the processing date.

Live Weight
(Avereage 1200lb)
Live weight is how much the animal weighs when it’s alive, on the hoof.
Hanging Weight
(Avereage 1/2 360lb)
Hanging weight is the weight the butcher gives us after the animal has been processed and the animal hide, organs and such have been removed. The hanging weight is usually about 60% of the live weight. So if a cow weighs 1200 lbs live weight its hanging weight will be 720lbs. A half of beef would be 360 lbs, a quarter would be 180 lbs(approximately). This is also the weight the butcher uses to charge us for cutting/wrapping fees. This is also the weight that Burtt’s Beef will use to charge you for your 1/2 or 1/4 of beef. The hanging weight is the most consistent way to measure the carcass before getting into customizing the cuts.
Packaged Weight
(Aveareage 1/2 180lb of packaged beef)
Packaged weight or sometimes referred to as take home weight, is how much you the customer take’s home and puts in the freezer. This is usually 60-65% of the hanging weight. The loss comes from 2 places: `water loss and bone loss. Water loss occurs during the dry aging process where the beef is allowed to hang for 7-10 days to tenderize. The second place you might loose weight is from cutting the meat off the bones.
